Offal is nutrient dense and contains highly bioavailable protein and a balanced profile of amino acids and micronutrients including iron, zinc, selenium, and vitamins A, D, and B12. Beef offal includes the stomachs, tripe, or large stomach, brains, heart, liver, tongue, pizzle and kidneys.
