Bean is a legume that is a rich source of protein and carbohydrates, and is abundant in B-complex vitamins such as niacin, riboflavin, folic acid, and thiamine; also provides iron, copper, zinc, phosphorus, potassium, magnesium and calcium, and has a high fiber content. There are multiple varieties of bean that are characterized by their size, shape, color and type of growth. It is considered that in total there are about 150 species, although in Mexico they amount to 50, highlighting the four species that man has tamed. Beans are a product of great importance worldwide. It comes from the genus which has about 80 wild species of bean; Being able to tame only five species for human consumption. This food was basic in the diet of the pre-Columbian peoples of the Aztec and Inca empire where they have been found remains that date of 4975 BC. It is believed that the beans originate in Mexico and there are antecedents that the plant has been cultivated for approximately 8000 years (University of Costa Rica, 2008).
