Millets that make delicious dishes have been much neglected during and after the Green Revolution, which focused on wheat and rice â cereals better known in the west. These tiny grains originated in India, China, and Africa and are now grown in almost every part of the world. They are traditional food crops, known since 5000 B.C. or earlier. They are normally rain fed crops, needing very little water and no pesticides.
Millets are on the whole more nutritious than wheat and rice which have replaced millets in most parts of India.
