Cirulli Olive Oil
The cirulli mill buys and transforms olives from cultivar coratina oil that is a typical olive variety of the area, rich in polynols and with low oleic acidity which privileges the quality of the oil with the best organoleptic qualities. the production process begins from the harvest of the cirulli family's olives and from the purchase of olives belonging to small local producers on the basis of a visual examination of the olives quality. once purchased and arrived at the mill, the olives are washed in appropriate washing machines with the aid of water and then milled within 24 hours from the harvesting in order to keep their quality and consequently maintain the olive oil fragrance. our evo oil has the advantage of being extracted from cultivar coratine olives selected on arrival to protect the quality, especially the genuinity of the product obtained.
