Cardamom is the dried ripe fruit capsules, often referred as the Queen of Spices, because of its very pleasant aroma and taste. It is a perennial, herbaceous, rhizomatous ginger like plant. One of the specialties of Kerala cardamom is that it is rich in aroma and taste. That is because it contains more oil content. What makes it stand apart from other varieties of cardamom is that it appears to be much greener in color.
