- This is an internal gas-filled organ or swim bladder found in most fish- When cooked, fish maw takes on the flavour of the surrounding ingredients- It is an exnt source of collagen- When purchased dried, it comes as a hard, solid, hollow, translucent tube (as shown above) and must be soaked to soften before use- When cooked, it has a soft, slippery texture- In general, fish maw has about 25% protein and 75% carbohydrate
