The food sterilization is the process by which foods filled and sealed in cans, or other similar packages are subjected to heat treatment at high temperature for long enough to reduce the population of microorganisms and reduce the risk of development of toxins. The most common sterilization process is dedicated to the reduction of Clostridium Botulinum colonies, a bacterium capable of forming spores of a toxin capable of causing fatal poisoning known as botulism.
Canned foods are divided into low and high acidity categories. Those with a pH greater than 3.5 are considered low acidity; while those of high acidity are those with a pH equal to or less than 3.5. Highly heat-resistant microorganisms reproduce less easily in acidic foods, and a heat treatment at 70-90 ° C is sufficient to prevent fermentation during storage time. Some foods with a low pH of less than 4 can be stored without sterilization using acid additives (acidified foods).
An autoclave is a thick-walled hermetic container, which allows high pressures. The principle vaguely approximates that of the pressure cooker but is much more effective. The autoclaves and sterilizers are used for both sterilization processes and pasteurization processes, as long as the internal pressure generated in the container exceeds atmospheric pressure as a result of thermal expansion of the food or gases contained. The increase in pressure in the autoclave due to the inflow of steam and/or overpressure air compensates for the internal pressure generated inside the package so as to avoid damage to the seal or deformation of the package.
