Food grade ammonium bicarbonate is a white-crystaler used as a raising agent in baking industries to baked goods like biscuits, cookies and cakes that decomposes to carbon dioxide, water and ammonia that makes the baked goods rise.
It has a faint ammonia odor and, it is a mildly inorganic compound. Itâs also highly soluble in water and has a strong smell of ammonia that regulates the value of the baked products.
Ammonium hydrogen carbonate or powdered baking ammonia is another name for this compound. It has a chemical formula of NHâHCOâ and a chemical structure of ammonium cation (NH4+) and bicarbonate anion (HCO3-).
It has chemical properties such as its insolubility in alcohol and has a value of 7.8. It dissolves to form a milky alkation; when heated, it decomposes, and ammonia, carbon dioxide, and water are the products. It may burn but does not readily ignite.
