Bergamot is a close relative of the bitter orange tree, and the small fruit it produces turns yellow when ripe. Unlike other citrus fruits, this fruit is too acidic to eat! Essential oils are extracted from the skin of fruits close to maturity, the main producers being Italy, Corsica and Morocco. In cold-pressed form, 200 kg of bergamot skin can get 1 kg of essential oil.
