The Processing Flow of Fully Automatic French Fries Making n>

STEP 1:- PREPARATION

Â

As potatoes are received, they are sorted,and pre-graded to correspond with the type ofFrench fry to be produced. Potatoes then enterthe pass through the destoner andwashing process, before being peeled.

STEP 2:- STEAM PEELING AND INSPECTION

Â

After steam peeling, the deskinner removes andcollects the peel waste, and the potatoes arethen washed clean prior to being inspected andtransported to the cutting process.

STEP 3:- CUTTING

Â

The cutting process is performed by either ahydro-cutting or mechanical cutting system.These machines cut the potato into strips—crinkled or straight, to the desired size, andthen pass the strips through equipment thatremoves slivers and nubbins.

STEP 4:- BLANCHING

Â

The potato strips then pass through a blanchingsystem, consisting of two or more screwblanchers. Here the strips are gelatinized andthe sugar levels reduced, then they go throughthe SAPP—dipping belt, before being pre-dried.

STEP 5:- DRYING

Â

During the drying process (which is optional forsmaller he moisture content is reduced,and the strips are now ready for the fryingprocess, where the final texture and colour isachieved. Before entering the fryer the Frenchfries are transported on the Equilibration beltto get an even moisture content.

STEP 6:- MULTIZONE FRYING

Â

With controlled oil flows together with Multi-Zone design and the belt return outside thefryer, Rosenqvists frying system will give youthe best tools to achieve the desired textureand colour. After frying, the French fries willpass a defatting step. For coated fries andother potato products, a batter and pre-fryingstep is added before the normal frying system.

STEP 7:- FREEZING & PACKING

After the defatting step the golden French frieswill enter the freezer, on their way to the packagingsystem. The also be equippedwith a pre- cooler installed before the freezer
