MOCAF is not just cassava flour it is made of naturally fermented cassava chips with organic fermenter in order to modify the cells and characteristic of cassava without additional chemical of harmful material, then it is dried and ground to be a MOCAF flour. MOCAF has a different characteristic compared to ordinary cassava flour and or tapioca, especially in terms of the degree of viscosity, gelation ability, power and ease of rehydration dissolves better. It is gluten free, low glycemic index, lower fat, lower calorie and populer in UK, Europe, Canada, Asia as vegan food, pharmacy, and industrial needs. It can substitute wheat flour from 50% up to 100% depend on the application.

Our product is internationally certified i.e: Halal, ISO 22000 (covering FSSC 2200) HACCP, BPOM (it is from Indonesia government, similar like FDA in USA), has laboratory test and analysis result such as non GMO, no gluten, no heavy metal contaminant, no pesticide residue.

  • Conventional cassava flour (ordinary cassava flour we call it)  made of raw cassava tuber without any advance process, peeled, dried, ground to be flour. The result is flour with odor, strong cassava flavor, murky white, less starch, still has cyanide in very low ppm (part per million).
  • Tapioca also another kind of cassava product, it is made of cassava starch. Fresh cassava is ground, the water is evaporated and its starch is deposited or precipitated, then dried, filtered as tapioca. it can be used as material of glue.
  • MOCAF is advance process of producing cassava flour, in order to get general purpose flour near to wheat flour, but gluten free, healthier, clean, no odor, whiter than ordinary cassava flour, more starch than ordinary cassava flour.
