Because blanched almonds have the skin removed, the meal is cream to white in color. With a texture similar to cornmeal, almond meal is an excellent gluten-free alternative to wheat flour for baking and cooking. For baking, it is not recommended to use almond meal all on its own but to blend it with another type of flour (wheat or gluten-free).
