The sphere of our interest is to create  favorable storage conditions for local fruits and berries, which are perishables but in high demand on the market.The storage of these products by acoustic shock freezing seems to us the solution of the problem. The creation and launch of such  cold storage system is relevant for our country, as there are not much storage facilities not only in Georgia, but also in the entire South Caucasus region. There is a location, where a cold storage complex can be built; it can cover the whole country, especially its western regions. Fruits and berries that must be purchased from local farmers and peasants will be safely preserved. The technology of cold storage of products in a controlled air environment will extend the shelf life without changing the quality of the products, with minimal weight loss. It might be possible to sell products when there is great demand in the consumer market. The product will be stored in accordance with European standards. Long-term storage of the products without loss of quality provides the opportunity to sell products anywhere in the world.
