Ceylon Cinnamon (True Cinnamon)?
Ceylon Cinnamon
has a beautiful golden, brown colour. It is made up of smooth, soft and thin quills which makes it easier to break. Ceylon Cinnamon is less bitter with a sweet finish with a sweet aroma which
comes from the low cinnamaldehyde levels compared to Cassia Cinnamon. The levels of Coumarin available in each type of cinnamon is very different. Cassia cinnamon contains approximately 1%
coumarin. Coumarin is a compound found in plant species which can be toxic if consumed over the daily limit. Consuming Cassia cinnamon just 1-2 teaspoons a day could bring an individual over the
daily limit. Ceylon Cinnamon on the other hand contains 250 times less Coumarin which is so low that it is undetectable. Therefore, for regular consumption or for diabetic supplementation Ceylon
Cinnamon (True Cinnamon) would be the safest option.
