The cover pages should be a matte cover stock that is thicker than the inside pages. The inside pages should be 80 - 100# uncoated. The pages in the workbook are double-sided so you want to limit being able to see through it. It also must be uncoated so the users can write in it. I usually give the printer a range of paper weight and room to speak into what they think will look best. The binding should be wire-o so it can lay flat as people use it.
