The pasta is made using 100% durum wheat semolina and bronze drawn (not laminated) which gives the pasta greater porosity (roughness of the pasta) and a high resistance in cooking. It is sold frozen for restaurants and coffee shop. It is preserved for more than 1 year, The chilling process the pasta is to -18 and it is carried out immediately after making the pasta without first doing the pasteurization. This does not alter the organoleptic characteristics of the pasta, leaving the characteristics of freshly made pasta unaltered.
